Plum Cake

What you need: 

1 lb greengage plums (overripe is fine)
1 cup all-purpose flour
1 cup whole wheat flour
1 cup sugar
1 teaspoon baking soda
1 banana
1/4 cup vegetable oil
1/3 cup soymilk plus 1 tablespoon lemon juice
3 tablespoons applesauce
Optional: 3/4 cup chopped nutmeats

What you do: 

Place stoned plums in mixing bowl (if they're overripe, the stones will squish out with no problem). Add banana and mash well. Add remaining wet ingredients and mix well.
In sifter, combine dry ingredients and sift into wet mixture, beating well by hand or with mixer. Blend in nutmeats if desired.
Pour into nonstick loaf pan and bake at 350ºF for approximately 1 hr, or until a knife blade comes out clean.
Tip pan on its side and allow to cool on a bread rack before unmolding.
I created this when a bag of plums got pushed to the back of the fridge and were too soft to eat when I remembered them. What a lovely mistake!

SO HOW'D IT GO?

Just took this out of the oven and it is sooooooo goooood! I made it in a round pan and sprinkled the top with brown sugar before baking....it looks so pretty and is really great! :D

I made this today using about a cup and a half of stewed plum-and-apple, and three overripe bananas, which I beat up well with the liquid ingredients before adding half oat flour and half wheat. It made a large loaf and DH didn't know there were plums in it! He "doesn't like plums" but will eat this made with stewed fruit!

I used gluten free flours, 2/3 cup sugar, two types of plums (veryyy ripe) no apple sauce or banana, some enerG egg powder and coconut milk. Fit into a 10 (12?) inch cake pan and a 6 inch cake pan. Cooked for about 50 minutes with a crumb topping. OMG. I can finally go to sleep happy with a happy tummy.

This is in the oven now.... I wasn't sure how many plums made up a pound, and they're all different sizes... but I used about 8 (left the peels on but cut them small) and added two more because I didn't add the banana (didn't have bananas, but used an egg sub powder). I added a few handfuls of dried cranberries, and some cinnamon, cardamom, ground cloves and ginger... smells delicious! I also dusted the top with rolled oats to make it all pretty! It made way more than I bread pan would hold, and filled the loaf pan plus an entire 8 inch cake pan. Can't wait to try it!

Yes, I think blending the fruit is what made the problem. Or maybe your oven gauge is off and it isn't getting as hot as the setting says.

dont know what I did wrong but my cake turned out all chewy on outside but goey inside - even though I cooked it for almost 90 mins!!  Only thing I did different to reciipe is instead of mashing the fruit, I semi- blended it in food processor(making it quite liquidy)... so maybe my liquid ratio was then too high and I should have used more flour?  The mix did seem runny when I put it in the loaf.  Oh well... it is still yummy and if served warm with tofu icecream, would make delicous desert. :)

Oops, I accidentally used baking powder instead of soda, egg replacer instead of applesauce, and I don't have a sifter either.  Nevertheless, this recipe was a success!  The result was chewy and sweet and very plumy.

I can hardly wait to try this recipe.  My mother used to make something like this for my brother and I when we were very small and it was always special to us.  She had a German name for it, not sure how to spell it out.  Anyways, it looked very similar to the picture here, and wow does this bring back some great memories! I will post as soon as I get a chance to make it (need to wait to aquire the ingredients) and see how it compares to what I remember!

This recipe was so simple and fun to make. My fiance's mother always give us tons of fruit. I had the plums sitting in my fridge about to go bad when I can acoss this wonderful recipe :D. The plums tasted similar to cherries! I really enjoined making this and had an even better time eating it. Thanks so much for this recipe yabbitgirl! :)>>>
