Pretty in Pink Berry Oatmeal

What you need: 

1 cup water
1/2 cup frozen mixes berries
1/2 cup oatmeal
2 tablespoon flax seeds (optional)
sweetener (brown sugar, maple syrup, whatever)

What you do: 

The best part of this one may be the color- the oats soak up the berry juices and you end up with a bowl of magenta cereal!
Good with a multi-grain cereal instead of straight oatmeal. The flax seeds aren't necessary but they give a little bit of nutty flavor and are good for you too. I used a frozen berry mix from Trader Joes that had blueberries, raspberries and blackberries. Fresh berries would be fantastic.
1. Pour a small amount of water (1/4 cup or less) into a non-stick pot or pan. Turn heat on high and add the berries. Simmer until berries start to break apart (just a couple of minutes).
2. Add oatmeal, flax seeds, and the rest of the water. Turn down the heat and let it simmer, stirring often.
3. Pour it in a bowl, sweeten as desired.

SO HOW'D IT GO?

i had to use a microwave since i'm packing up our pans... but this was tasty! kinda sweet, a tiny bit tart, and all around good!

Am I the only one who saw the mini picture of this in the sidebar, and thought it was a hamburger patty for a minute?

Awesome idea!  This needs to be in the kids' section too.  What little girl wouldn't want pink oatmeal, and what mom wouldn't love the lack of food coloring.  I like to make her oatmeal kind of thick to reduce the mess, so this was too much water.  I will also leave out the blueberries next time to make it more pink and less purply.  I loathe oatmeal, so I can't say anything about the taste, but she is inhaling it right now as I type.  I smells yummy.  I did use walnuts instead of flax to avoid the after effects on that much flax in her system at one time.

Great idea! Really yummy!

I like to add a mashed banana(to cut down on the amt of sweetener I need,.. oh, and it's healthy!), some coarsely chopped walnuts and 1 tsp sugar, and it is just perfect! Really keeps you filled up for a while.

delicious!! i will be eating oatmeal like this from now on

i used all strawberries, next time ill try all blueberries and make purple oatmeal

this was pretty good...i added some almonds instead of flax...the color is the best part!!
