Potato Chowder

Ingredients (use vegan versions):

    3 average sized potatoes peeled & diced (russet or Yukon gold preferably)
    2 tablespoons margarine
    1 tablespoon flour
    dash white pepper (or black if you don't have it)
    1/8 teaspoon fresh ground sea salt
    1 1/2 cups soy milk
    dash white pepper (or black if you don't have it)
    1/2 white onion chopped
    Fresh cut chives for garnish

Directions:

1. In a medium frying pan cook the potatoes through, and set aside.

2. In a medium sauce pan melt the margarine on low. Once melted add the flour, sea salt, pepper, and mix thoroughly. Then add the soymilk all at once. Cook quickly stirring constantly until the mixture thickens and bubbles.

3. Reduce heat to low, and add the potatoes, onions, and garlic powder (or garlic salt if you chose otherwise). If at this point the soup is too thick one may add soy milk, if it is too thin a small amount of arrowroot powder may be added to thicken it up. Continue to heat on low, stirring occasionally, until the onions  are tender.

4. Separate into soup bowls and garnish with chives. Serve.

Serves: 2

Preparation time: 40 min.

This recipe wasn't bad. I needed some extra spices to it and I think I should have cut the potatoes a little smaller. Other than that it was easy to make and it was pretty good!

Also, use large pans. My "medium" didn't hold it all.

I used extra onion and another spice...
This turned out sweet, but very good. :-)

Well, to be perfectly honest I wasn't very happy with this recipe... Sorry! I hate to be the meanie, but it was to sweet for me. I like my potatoes salty... but my mom loved it.

I love this recipe, though I omitted the margarine.

I suspect the reviewer above possibly used the regular, sweetened soymilk--unless you specifically buy unsweetened it will probably have evaporated cane juice or another type of sugar added. Salt can always be added as well--I prefer it salty, too, though adding salt is not so healthy.

I didn't get to eat any because my husband ate it all!  Grin But he says it's delicious!

Hehe, I actually did have some (just one bowl that I had to fight to get!) but it was REALLY good. My mother used to make me potato soup when I was sick, and this reminded me of that. I added two freshly diced garlic cloves instead of dried garlic powder because I didn't see it in the ingredients list.

oh, man, it's raining today and i thought - potato soup sounds good. little did i know this recipe would become my new favorite soup of all time. i made some changes: i left the skins on the potatoes, because i like skins and to give the soup another color besides white. i also sauteed the potatoes with a clove of fresh garlic and added garlic powder with parsley to them while they were in the pan. okay, i'm an addict, i also added garlic to the melting margarine.  i doubled the broth recipe and put in a touch more flour than the recipe calls for. beautiful. thank you so much!

I thought it was amazing. I changed it up a little bit.. Instead of peeling potatoes, I just used half a bag of Ore Idas hash brown cubed potatoes. I grilled them and added them to the cream. Which I put too much butter into but otherwise it came out amazing. Best chowder I've ever had Smiley

Maybe next time I'll add the milk in first and mix the flour into that. But this batch came out better than the last Smiley

This was very good, although I cannot imagine what it would have been like if I hadn't doubled the broth!  I used rice milk, and added some garlic powder and a little extra salt.  I did have to add some arrowroot to get it to the nice thick chowder consistency.  It was quick and easy, and I really enjoyed it!

These were absolutely DELICIOUS!
I cut down a bit on the ingredients as a whole but stil i couldn't finish it cus im full. Tongue
But i can't wait to finish it laterr!
Thanks for this recipe i definitely WILL make it again!
Oh yeah, and my mom had a bit and she thought it was yummy too. ^^
