Sweetened Ice Berries!

Ingredients (use vegan versions):

    1 cup frozen small berries (blueberries, raspberries..)
    1 cup soy milk
    sweetener to taste

Directions:

Place frozen berries in a bowl.  Add sweetener as desired.  Add soy milk.  Let stand for about 2 minutes; the soy milk and berries will freeze together to form an ice cream like texture.  Mush around a bit and enjoy!! This is seriously DELICIOUS... and simple!

Serves: 1

Preparation time: 1 minute


I'm a little confused. It only takes 2 minutes for the berries and soy milk to form an ice cream like mixture? Is that correct? I'd like to try this. It sounds yummy.

You got it Inanna!  The berries, being frozen, freeze the soymilk... its a brilliant discovery I made whilst mixing different food favs!  AND the blueberries are ful of health benefits!

Wow! This was great! It really does make a fruit slush after only a couple of minutes. What a refreshing treat! I made it with blueberries, now I can't wait to try it with strawberries and raspberries. Also, I noticed they sell frozen mango and peach slices. I'll bet that's good too. I am not vegan, only a vegetarian, and so I continue to eat ice cream and what not. Well I was out of ice cream and was craving something sweet and cold and so tried this, which was surprisingly good. The frozen fruits that I buy from Trader Joes seem to be naturally sweet enough so I skipped the sweetner and just added in soy milk. Mmmmm.

I LOVE this recipe... SO simple.  I make it all the time.  I use a mix of blackberries, blueberries, and raspberries.  I also add some chopped frozen banana and sprinkle walnuts on top.  I usually let it sit in the freezer for 10-15 min cause I like it kind of solid...

This recipe rocks!    Grin

I forgot to rate this and eat it all the time! Easy, quick, yummy and so healthy. I use blueberries only. Very very refreshing!

I used to make this for myself all the time, but haven't had it in over a year. I used to make mine with soy creamer (silk brand) and frozen blueberries, and sugar. I usually let the blueberries thaw just a little bit because otherwise the whole think freezes into one big solid chunk.

I never thought this would work, but it did and it is absolutely fabulous! I did not bother with accurate measurements for this recipe and had these "clots" of blueberries with pieces of frozen soy milk. I didn't sweeten mine either and it was still good. Thanks for the idea!

Thanks for bringing back happy memories! Mom taught me to make this when I was a kid (with dairy milk back then, of course!). We would pick blueberries in the summer at the local orchard, and freeze them to use in the winter.

I hadn't thought of it in years - but might be time to have some - in the new, improved vegan version Smiley

ooh this similar to agudaq, an alaskan native berry meal that my grandma makes.  traditionally it's made with seal oil, berries, snow and dried fish... but my grandma makes it with vegetable shortening, milk, sugar, and frozen (wild) berries.

it's way good.

I tried this recipe about a year ago and was disappointed - it was just berries floating in a bowl of milk! Today I was inspired to try it again and this time I followed the part about mushing it up, and it turned out that is very important. Blackberries are a little hard to mush than the raspberries, but it's very doable. Great recipe, I will be having this for breakfast for the next week! (my groceries are running low...)
I just had another bite after it's been sitting while I typed for a few minutes and it's even better after sitting...yum yum yum.

I make something similar to this using frozen cherries and plain yogurt, a little sugar, and a little almond extract if we have some (rare).  You could use soy yogurt or dairy yogurt, depending on how you swing.  It freezes nice and creamy and stands in well for black cherry ice cream, my fave flavor, but much better for you.  I call it Nice Cream.  Smiley

Very simple, and a much healthier alternative to ice cream.  I made mine with blackberries and vanilla rice milk.  Then, since that worked out so well, I threw some chocolate chips into a little bowl of rice milk and froze that for about 15 minutes, then mushed it up and ate it like ice cream.  Very nice!

I served this along with coconut rolls for brunch this morning.  I used frozen raspberries because we had no blueberries.  It actually did become a slushy, semi-frozen, very cold kind of concoction, but I didn't add much sweetener and the raspberries were a bit sour for my taste.  My oldest child loved it and finished his, mine, and his sister's!  I can imagine how awesome it would be with a sweeter berry (or with more sweetener), so I will keep trying!  I will also try someone's suggestion of using soy yogurt instead of soy milk, maybe with a little cinnamon and agave nectar on top.

i haven't tried this exact thing, but i love putting frozen blueberries on my cereal in the morning and then topping with vanilla soymilk.  it sounds weird but if you like this then you'd probably really like that too.  it's super good.
