Arfs Nachos

Ingredients (use vegan versions):

    3 onions
    2 whole garlics
    1 capsicum
    5-10 jalapeno chilli peppers (Maybe 10-20 if you think you can take it)
    3-4 large ripe tomatoes
    1/2 bottle of chilli sauce
    1 large tin kidney beans (dried beans can be used)
    2 tins refried beans
    oil for frying
    packet of toasted cornchips

Directions:

Peel and dice onions, peel and finely chop/crush the 2 garlics (not cloves, 2 garlics). Finely chop chillies (including seeds). Dice Capsicum. Fry onions,garlic and chilli till onions are soft. Add capsicum and tomatoes, Cook for a while then add chilli sauce. Add kidney beans and refried beans.  Cook for as long as you want (the longer you cook,the hotter it gets).  Serve with corn chips.

Serves: 4-6

Preparation time: 1 hour

Nutrition Information: Good source of protein and fibre.  Great for an endorphin rush.


I'm about to try this recipe, but had no idea what in the world a capsicum was... after much searching, (including asking several produce dept. workers) I finally figured out that its a chile pepper!  Just thought I'd share for those of you out there who are as clueless as me...

I lived in Europe for awhile,and there (and in India) a capsicum is a green pepper.  I don't know if some people think its a chile pepper and some a green pepper, but just thought that I'd pass on the info!

Yourre right Mita - capsicum is pepper (red, green, yellow, whatever). Its the non-chillie type.

Capsicum is the active ingredient in pressurized cans of Pepper Spray used for self defense (better than mace!).  Believe me, it is take your breath away, she'd a few tears time if capsicum is concentrated.

I lived in Australia for a few years and capsicum is a bell pepper, and they are not hot at all!

refried beans; frijoles refritos; refritos [free-HOH-lehs reh-FREE-tohs] This popular Mexican specialty consists of cooked RED BEANS or PINTO BEANS that are mashed, then fried, often in melted lard. Refried beans are sold canned in most supermarkets. The term frijoles refritos  translates as refried beans.

capsicum [KAP-sih-kuhm] Any of hundreds of varieties of plant-bearing fruits called peppers, all of which belong to the nightshade family. Capsicums fall into two categories — CHILES and SWEET PEPPERS.

Also, Judy is mistaken. Capsaicin is the active ingredient in pepper spray, and the chemical that makes peppers hot. Capsicum is a type of pepper, which contains capsaicin.

Veggiegurl21--Perhaps you haven't been to the grocery store lately, but there are plenty of options for canned vegetarian refried beans, as well as fat-free refried beans.  Theyre right in the same section with the regular refried beans.

There are several vegan brands of refried beans, as well as low-fat versions.  You can find them in cans in the health food aisle/store, sometimes alongside the regular stuff.  I personally, for weight-conscious reasons, love the Fantastic Foods dehydrated refried beans - just add boiling water. Also, you can just puree or mash cooked black beans and maybe add a smidge of olive oil.
