Peanut Butter Lunch MixIngredients (use vegan versions): Peanut Butter
Syrup (maple or rice or fruit...)
raisins
Vegan chocolate chips
Directions:Put enough peanut butter into a bowl as would be a serving size-about 3 spoonfuls. Pour just enough syrup over it so its covered-as you would a pancake. Mix in raisins and chocolate chips. Stir until the syrup and peanut butter are blended. Eat and enjoy.
Serves: 1
Preparation time: few min.
Thank goodness I am not the only person to eat this way!! I am allergic to peanutbutter, I use soynut butter, maple syrup, cocoa powder (allergic to corn too), and sometimes a soy/rice protien mix and oatmeal if I need more energy!

My only concern is that this is very high in fat and carbs. Should it really be considered a lunch mix? I added up the calories using an online calculator, and it totaled 1033 for 3 tbs. pb., 1/8 cup maple syrup, 1/2 cup raisins, and 1/2 cup choc. chips. Granted there is some nutrition here, but is it worth it?
