Avocado and Cream Cheese Pita Sandwich

Ingredients (use vegan versions):

    vegan cream vegan cheese (I love Tofutti)
    1/2 avocado
    1 tablespoon sunflower seeds
    handful of lettuce/spinach
    1 pita, cut in half

Directions:

Spread vegan cream vegan cheese on one half of the pita and avocado on the other half. Add in seeds and lettuce/spinach. You can also toast the pita for a warm sandwich.

Serves: 4

Preparation time: 10 Minutes


At first I was excited by the prospect of there being such a thing as vegan cream cheese, until I read the ingredients.  The second ingredient in Tofutti Better Than Cream Cheese is partially hydrogenated soybean oil.  Partial hydrogenation = trans fats.  I find it somewhat appalling that a so-called healthy product is made with trans fats, especially when there are so many alternatives.  I don't mean to get anyone down with this comment, but I just thought I'd point it out.  If anyone knows of vegan cream cheese that doesn't contain trans fats, I'd love to know.

Whole foods sells the Tofutti cream cheese substitute without tfas....it is in a yellow container.  Their sour cream substitute that is in the blue container also has no tfs!  hope this helps...I don't even know why they are still putting out a product that has tfs in it.

ive made this pita sandwhich before and im happy to see someone submit it for a recipie. its delish! also good if you try it grilled...yum!

I tried this recipe on a picnic with my husband and children recently -- what a hit!Thanks for the idea.  I've made it several times now with variations.  I like it with cucumber added in there, too.  My children swap the cream cheese for natural peanut butter and add sliced banana.  YUM!
