Tempeh Salad Sandwich

Ingredients (use vegan versions):

    8 oz tempeh, steamed 20 min, cooled and grated
    2 stalks celery, diced
    3 scallions, sliced
    1/4 sweet red pepper, diced (optional)
    1 tablespoon pickle relish
    1 teaspoon prepared mustard
    1 to 2 tablespoon soy vegan mayonnaise
    salt and pepper to taste

Directions:

Mix all together (or buzz til right consistency in food processor.) Serve in pita or on whole grain vegan bread.  This is based on a recipe by Jennifer Raymond in The Peaceful Palate.


yum, yum, yum!!! this is so very good.  i had it in a pita with mayo and lettuce. this has become my new favorite sandwich. mmm mmmmmm mmmmmmmmmmmm.    Smiley

I'm a new vegetarian and was searching for recipes for tempeh. This recipe was REALLY good! It was very easy too. I used more relish though than the recipe called for and i used Nayonaise(tofu mayonaise)

I added a little spoonful of miso and a handful of baby carrots (grated) and it was fantastic! We don't have any vegan mayo so it was a little dry, so I contemplated other things to add to give it a little moisture, but ended up just leaving it as is (still delicious). Next time we make this, well get some mayo (we like Spectrum Natural eggless mayo) and I think it will be perfect. Were having this in pita for lunch, but I think you can also serve this with crackers for a snack.

i made it a little diff, spicy brown mustard a bit of hummus.....but omg foodgasm! amazing!

Yum!  How could this not be tasty?  I sauteed my tempeh instead of steaming it and ate it with crackers instead of on bread.  This is definitely good for lunch!
