The Best Grilled Cheese Ever!

Ingredients (use vegan versions):

    2 slices of wheat bread
    4 slices vegan soy cheese
    4 thin tomato slices
    2 Tblsp of salsa
    4 onion slices
    4 green pepper slices

Directions:

Place 2 Slices of soy cheese strategically on a slice of wheat vegan bread. Place bread on greased, heated pan (Medium-low). Allow soy cheese to melt, pour 2 Tblsp of salsa on top of  soy cheese, and quickly cover with another slice of soy cheese. Cover third slice of soy cheese with peppers, onions, and tomatoes, then cover vegetables with the last slice of soy cheese. Let cook until cheese is melted completely, flip accordingly, serve and eat!

Serves: 1

Preparation time: 15 min.s


Can someone please tell me where you can find a good soy cheese that does not contain casein? Every one that I have tried tastes so disgusting that I just don't even make anything that calls for vegan cheese anymore. If you know of a good brand PLEASE let me know !

To Smochel--Follow Your Heart brand makes great vegan cheese.  This is the same company that makes Veganaise, a great vegan mayonnaise.  The cheese comes in 4 flavors--mozzarella, cheddar, nacho, and monterey jack.  It melts wonderfully, also.  Give it a try!

Why won't my cheese melt!?!?! I got soft cheese but not melted cheese. I used the Follow Your Heart brand that everyone raves about. Does this cheese just take way longer than dairy cheese to melt?

Yes, vegan cheese takes MUCH longer to melt than dairy cheese. Follow Your Heart is still the best for melting (faster than other brands). When I make grilled vegan cheese sandwiches, I grill them on a LOW heat, so it takes a long time before they burn. Then, cover your pan while it grills. This allows it to steam and melt much more quickly. You'll still need to be patient; it won't take forever (maybe 5-7 minutes?) but still longer than your regular grilled cheese. Try it, it works - and it is delicious! :-)

Tofutti is the best for melting in my opinion, but it's chock full of hydrogenated oils. Sometimes I'll grill my sandwich and then just nuke it to make the cheese melt.
