Tofu/Spinach Sandwich SupremeIngredients (use vegan versions): Firm Tofu
Fresh Spinach (about 1 lb)
Soy Mayo
One Fresh Tomato
Sprouts
Garlic
Soy Sauce
mustard (optional)
Lots of Spices
Cup of Mushrooms.
Loaf of fresh Mountain bread, or Swirl Bread
Directions:Slice tofu into sandwich sized-slices--depends on what kind of vegan bread you prefer. Saute the tofu in the soy sauce and spices, include lots of garlic. Throw in a handful of sliced mushrooms at the last second to get them nice and spicy. Then assemble the sandwiches--with the remaining ingredients. (you can steam the spinach if you want) I also like to add some shredded carrots for a little crunch.
Serves: 4.
Preparation time: 15 min.
Nutrition Information: Its all good for you--especially if you use low-sodium soy sauce.

Why is it that people make comments that say sounds good. Even though its just as pointless as what im writing now, I think that what the readers want to know is how it tastes.Almost anything can sound good!

Unfortunately, I'm very new to cooking, so I don't know enough to pick spices at random and have it turn out well. If anyone who makes this could let me know what spices they used, that would be much appreciated. =]

I would say fresh minced garlic, oregano, maybe some thyme, and fresh stone ground pepper would add flavor without overpowering the sandwich.

umm.. isn't all mustard vegan? or have i been living in the dark? sounds very delicious though! i would just minus the mushrooms and replace them with avocado (since i have a long running hate of mushrooms!)... but that's just me.. oh, some vegan cheese might be nice as well.

This is good with a little bit of lemon juice and a drizzle of extra virgin olive oil. Avacadoes sound tasty, too. I'll try this with avacadoes and a bit of lime juice next time.
