Peanut Butter and Tomato Sandwich

Ingredients (use vegan versions):

    bread
    peanut butter
    thinly sliced tomatoes

Directions:

Just like the name implies--put peanut butter on a couple pieces of vegan bread, add some sliced tomatoes, and enjoy!

Preparation time: minimal


This sandwich is especially good with natural/or chunky peanutbutter and jersey tomatoes are the best. Toasted wholegrain or rye vegan bread is good and a little bit of salt and pepper on the tomato makes it. I didn't believe that this combination would be good, but if you think about it, alot of ethnic food like Indonesion has ingredients like this.

This is a great combination.  I've been eating this type of sandwich for a while.  I was running low on food one day, and decided to be creative.  People think I'm weird when I tell them its good, but I agree about it being like Indonesian ingredients.  I believe gado gado has peanut butter and tomatoes.

I wasn't really crazy about this. I think some salt would help.

I have eaten this sandwich since I was a tiny child.  It was a favorite of my grandmothers.  We would pick fresh tomatoes from the garden and toast the bread first.  YUM!!!  At that time we used JIFF peanut butter which has LOTS of salt in it.  So, if I make them now (with natureal Peanut Butter) I add a dash of salt on top of the tomato.  This sandwich always reminds me of summers at grandma's farm.   Smitten
