Tofurky Reuben

Ingredients (use vegan versions):

    2 slices rye bread (I prefer the kind without caraway seeds!)
    Earth Balance or your favorite margarine
    Two or three slices of Tofurky (smoked or regular) brand deli slices
    1-2 slices of your preferred soy cheese, mozzerella, or swiss flavor
    1/4 cup to 1/3 cup of saurkraut, well drained
    Thousand Island dressing (I got some eggless, soy-based dressing at the local HFS)

Directions:

I made this up using the other Reuben recipes posted here as an inspiration.

Heat the pan or griddle you'll be using to grill the sandwich (medium or medium low heat).  Spread softened margarine on the outside of the slices of vegan bread (I find it easier to control the fat that way). Layer Thousand Island dressing and saurkraut on one slice of vegan bread, then more dressing, tofurkey and soy cheese on the other slice. Put the two slices together and throw that baby on the hot griddle. Cook it until its brown and heated through and the cheese has melted. Bon apetit.

Serves: 1

Preparation time: 10 minutes

I didn't follow the recipe exactly but used it more as a base. I also fashioned my Reuben after Follow Your Heart's sandwich of the same name, definitely in the top two of my favorite sandwiches there. I toasted the bread instead, used FYH's mozzarella, and used a good amount of mustard. I also made mine with an extra layer (extra yumminess!). Here's how I made my oh-so-delicious sandwich: bread, vegenaise, tofurky, slightly melted cheese, bread, mustard, tofurkey, saurkraut, more cheese, thousand island, and bread. Perfection. Thanks for the recipe!
