Chickpea Salad Sandwich

Ingredients (use vegan versions):

    2 slices whole wheat bread
    chickpeas
    mustard
    soy mayonnaise
    pickle relish
    vegan soy cheese, optional
    lettuce, optional- i like the spring greens mix
    tomato slices, optional
    fresh ground pepper

Directions:

When I became vegetarian, i missed the weirdest things, and one of those things was chicken and tuna salad sandwiches.  This is a good substitute, because with the mustard, mayonnaise, and relish, you can hardly tell what the main ingredient is anyway.  Non-vegetarians will like it too!

Put the chickpeas, mustard, mayonnaise, and pickle relish (or whatever you would typically make meat salads with) in a bowl and mash with a fork into a lumpy consistency (should have texture, not smooth like hummous).  Put cheese on one slice of vegan bread spoon chickpea salad over it.  Top with lettuce and tomato slices and add pepper to taste.  Put other slice of bread on top to close sandwich and slice in half from corner to corner.  Yummy... enjoy! Wink

This is awesome! The only change I made was adding some kidney and pinto beans into the mix as I like a variety of beans. But it is difficult to tell the difference from a tuna fish sandwich when you add the Nayonaise, relish, and mustard. LOL, I initially thought it sounded pretty gross cuz I'd only put mayo in tuna, but I tried it and its great. Thanks..now I can appease the more carnivorous members of my family without a hassle!

I really loved this!  I will never miss a tuna or chicken salad sandwich again.  I made it with Lemonaise light, brown mustard, dill relish and freshly cracked pepper and put it in a pita pocket with some spring greens and sliced tomatoes.  Mashing the chickpeas a bit with your fork gives it the perfect texture.  I found it a very satisfying quick lunch.

Fantastic! I have a lot of recipes for spreads but wanted something heartier with texture, and this is perfect. I was also pleased with how quick it is to make.  I added in some chopped up celery and grated carrot too.

I remain obsessed with this stuff. A friend asked me for measurements so he could make it, so for anyones befefit, here's what I use:  1 15 oz can chickpeas, drained and rinsed 3 tbsp nayonaise 2 tsp relish 2 tsp mustard most of 1 carrot, grated 4 inches of celery stalk diced fine

This is so good, and so simple!  I made some last night to bring for my lunch today and I couldnt stop tasting it!  I added dill pickle juice to help mash it up a bit without adding too much fat with extra nayonaise.

Aww man...I was craving a chicken/tuna/turkey/ANYTHING salad sandwich, so I decided to try this recipe. I drained and rinsed a can of chickpeas, mashed them until lumpy, then added vegenaise (soy mayo), relish, chopped celery, chopped green onion, mustard, salt and pepper...mixed it all up, plopped it on a sandwich....It was divine.

I loved this sandwhich!!!! I chopped up some celery and red peppers, and instead of normal mustard I used Dijon, which gave it an extra zip!! I'm new at being vegetarian and I think this recipe will be one of my favourites for a long time to come!!

WOW!!  so exciting!!!  after reading the recipe i ran to the kitchen. i made mine with some mayo, mustard, dill relish, onions, celery, (chickpeas, of course) and threw in some diced cucumber for added interest. my recipe made 1 and 3/4 cup. i figured that it came to about 82 calories per 1/4 cup serving.  it was FABULOUS!  it was so oddly reminiscent of tuna/chicken salad... that i had to remind myself it WASNT meat. (as a vegetarian... real meat makes me a little queasy!) great recipe... thank you for posting it!

Excellent! I've been veggie for 16 years, and pretty much gave up sandwhiches altogether. This recipe has given me sandwhiches back. The only problem is I can't stop eating it. A batch never lasts...

i made this with chickpeas,mayo,relish,green onion and chopped black olives with the lettuce and tomato and put it in a pita. thanks for the yummy recipe. i think i could mix a different mix of veggies etc..very versatile! Cheesy

i just made this and used mayo, dijon mustard, olives, cayenne pepper, sea salt, fresh ground pepper and a squirt of hot sauce. served it on whole wheat toast with sprouts and tomato. AMAZING!

I just made this with mortar & pestle; put the chickpeas in first, smooshed them a bit, then added mayo, dijon, relish, black pepper. On toasted homemade multigrain bread. Delicious! Fast! Versatile! Thank you!!

3 things:

1. This tastes nothing like tuna. (I wonder if this would taste like tuna if one were to add some crushed up bits of dried seaweed. Has anyone tried that yet?)
2. Mashing chickpeas sucks! (Next time I'm going to use my mini food processor and save myself some arm work.)
3. Mashing chickpeas or doing whatever you have to do to make this is totally worth it because this is so delicious--even in all it's un-tuna like glory.

I used a medium sized can of chickpeas (19 oz. I think), 2 little squirts of spicy mustard, a few shakes of tumeric for extra color and tang, 1 long stalk of celery (diced), 2 tbs. chopped onion, 1 small carrot (diced) and about 3 tbs. of Nayonaise. This makes enough for three sandwiches. I'd encourage folks  to make sure they mash the chickpeaas well--maybe even going over it with a fork after you're done with the masher-- to make sure it's all well mashed because I didn't do this at first and the flavors were a little uneven.

I don't have that much experience cooking and I'm currently on a tight budget, so I am happy to have found something that is so inexpensive and quick and easy to prepare.  Thanks for sharing this!

This is absolutely delicious! It's been years since I ate a tuna salad sandwich but that's what this reminded me of - although I remember tuna having more of a fishy taste (makes sense!). I put it on a wholegrain bun with lettuce and tomato and took it for my lunch today. I've got enough for two more lunches. My non-vegetarian co-workers were fascinated by it and all want to try it too.

Quick, easy and delish!  I added some chopped red onion, chopped red pepper and chopped celery for some added flavor and crunch.  I also added a small spoonful of sweet relish and a sprinkle of cayenne pepper.  I love this on toasted whole wheat bread or cracker.  Thank you for this wonderful recipe!!!

Welcome back to the world of sandwiches!  I love that this is so easy to make and that you can add to it! I added garlic and hot sauce to mine and chopped up celery.  served it on  fresh quick no knead bread http://vegweb.com/index.php?topic=5732.0 with veggie cream cheese, tomato, lettuce and a pickle on the side...there's even enough left overs for tomorrow... if it lasts that long!!!

I love this recipe because it takes about 5 minutes to make and keeps really well in the fridge.  I add grated carrots, relish, and lots of pepper to mine, and top with pickle and onion slices as well as tomato & lettuce. I've eaten this every day for lunch for 2 weeks!  Laisydaisy, I think I will try adding garlic to my next batch, thanks for the idea Smiley

Incredibly easy yet delicious recipe.  It's an amazing filler sandwich.  I didn't have vegan mayonaise, but it still made a great sandwich with tomatoe and lettuce. :]

WOW! Love it! Only thing, I found the mashing of the chick peas with a fork to be quite labor intensive. I switched them from the bowl to a big flat plate and it was easier, although still hard to do. I wonder if there is an easier way. I might try to stick them in the food processor and do  a few pulses next time. Anyone else have ideas on that?

i use a potato masher and a bowl that is large enough to fit the masher!!
I eat this all the time....

great for a quick lunch!
