Textured Soy Protein Tuna

Ingredients (use vegan versions):

    1 1/2 cup textured soy protein chunks or strips (unflavored)
    1 1/2 cup boiling water
    4 teaspoon vegetarian seafood flavored bouillon mix (from Harvest Direct)
    1 2inch piece of kombu seaweed (optional)
    3/4 cup soy mayonnaise
    2 tbl. pickle relish
    2-3 tbl. prepared mustard
    onion powder, salt, pepper to taste

Directions:

Mix the vegetarian seafood flavored bouillon into the 1 1/2 cup boiling water, then add it to the textured soy protein.  Add the kombu seaweed, if desired, and let stand 20-30 minutes until textured soy protein is reconstituted.  Remove seaweed and drain any remaining liquid.  Process textured soy protein in a food processor until it resembles flaked tuna.  Add the remaining ingredients, adjusting the amounts according to personal taste.  Chill in the refrigerator for at least one hour.  Use as a sandwich spread or on vegan crackers.

Serves: 4

Preparation time: 1 1/2 hrs.


This recipe was fabulous!!  I have really been missing tuna, and this was just perfect!!  Even people who eat tuna liked this.  I didn't use quite so much vegan mayo, but that's just me. It made a great sandwich with lettuce, tomato, and sprouts!!  Thanks for this recipe!!

Where do you find vegetarian seafood buillion? Are Harvest Direct products in health food stores, or do you have to special order?

I have no idea what kombu seeweed is, so I just skipped it. plus added some tomatoes and parsley. it was really good and my mom (not vegan lover) said that it tasted just like crab sticks.

Seeing as Harvest Direct is no longer what it used to be (dissolved years ago) and their seafood bouillon is no longer around. How did you make the recipe? Did you use a combo of some kind of seaweed powders?

Yes, I would also be very interested to know what can be used to substitute seafood-flavored bouillon. I'd love to make this!

you could try to add some finelty crushed nori for texture and "fishy flavor"

The next day i draned it so that i would only be left with the broth and threw away the granules. Then i added 1/2 cup of water (to make the 1 1/2 cups) After that i folled the rest of the recipie

Shocked  That sounds way too difficult for me.  Isnt there anything like the vegetarian seafood flavored bouillon mix that we dont have to make ourselves?    Undecided

The seafood bouillon thing sounds like a really good idea, but it's not necessary. I've been making really good vegan tuna sandwiches kind of like these for years, and I never thought to use a dissolved stock cube to rehydrate the TVP instead of just boiling water. Anyways, though, boiling water DOES work, just season it to your own tastes when you're mixing in the mayo and all that! Just like real tuna salad, TVP tuna salad will probably taste good even if you stray a lot from the recipe. But if I ever do find vegan seafood stock cubes, now I know one thing to do with them!

but what did you use girl for it to turn out the way it did.  your pic looks awesome but did you have the seafood veggie bouillon or what?

I tried this today and it was good. I bet it would be even better with the original ingredients. I didn't even chill mine before eating and it was really delicious.

I used Dulce seaweed sprinkles and Old Bay Seasoning for a more seafood/fish type flavor.

I also used vegetable boullion in the boiling water before adding the water to the TVP to flavor it more.

Thanks for an alternative to mock tuna salad made with chickpeas!
