Textured Soy Protein TunaIngredients (use vegan versions): 1 1/2 cup textured soy protein chunks or strips (unflavored)
1 1/2 cup boiling water
4 teaspoon vegetarian seafood flavored bouillon mix (from Harvest Direct)
1 2inch piece of kombu seaweed (optional)
3/4 cup soy mayonnaise
2 tbl. pickle relish
2-3 tbl. prepared mustard
onion powder, salt, pepper to taste
Directions:Mix the vegetarian seafood flavored bouillon into the 1 1/2 cup boiling water, then add it to the textured soy protein. Add the kombu seaweed, if desired, and let stand 20-30 minutes until textured soy protein is reconstituted. Remove seaweed and drain any remaining liquid. Process textured soy protein in a food processor until it resembles flaked tuna. Add the remaining ingredients, adjusting the amounts according to personal taste. Chill in the refrigerator for at least one hour. Use as a sandwich spread or on vegan crackers.
Serves: 4
Preparation time: 1 1/2 hrs.
This recipe was fabulous!! I have really been missing tuna, and this was just perfect!! Even people who eat tuna liked this. I didn't use quite so much vegan mayo, but that's just me. It made a great sandwich with lettuce, tomato, and sprouts!! Thanks for this recipe!!

Where do you find vegetarian seafood buillion? Are Harvest Direct products in health food stores, or do you have to special order?
