Amy Lous Fried Peanut Butter and Jelly Samich

Ingredients (use vegan versions):

    two slices of your favorite bread
    peanutbutter
    jelly
    margarine

Directions:

First, spread peanutbutter and jelly onto vegan bread.  Place the two slices together.  Next, spread margarine on both outside pieces of vegan bread.  Heat samll skillet.  Fry the sandwich until golden brown.  Center should be warm and gooey.

Serves: 1

Preparation time: 5 minutes


yum!  I'm a very picky eater, but i think i could eat this.=)

If you use natural peanutbutter, you cut the added vegan sugars and (often) hydrogenated oils while getting the wonderful flavor and benefits of the peanuts. Fat is neccesary in a proper diet. Its the animal fats, saturated fats and hydrogenated fats (both vegetable and non) which should be avoided. Also, try using an all fruit jam/preserves. Believe it or not, you can use a neutral oil like canola or corn in place of the margarine which is usually made with hydrogenated oils. Or use a nonstick skillet.

One of the hardest things to get as a vegan for me is fat. Yes, I said fat.  Carnivores like to make a big deal about where we get our protiein, but the truth is, I cannot seem to get enough fat.  I eat quite a bit of peanut butter as its easy and cheap, but you get sick of it.  This sandwich is awesome and really filling.  I don't think I could ever get tired of it!

MIDAPAY, Eat olive oil and olives.  Make an olive pesto, dip bread in olive oil.  Make hummus. Better yet buy The Mediterranean Vegan Kitchen Great stuff and a good and healthy way to get more calories/fat in your diet

I agree with Midapay; everything vegetarian and vegan that I pick up or attempt to cook is labelled Low-fat! Low calories! Well that's all well and good, but I do need SOME fat!  Anywho, I'll be sure to try this recipe out this week, it sounds amazing!!

MIDAPAY, there are lots of healthy fats you can eat.  You can also try other nuts and nut butters for variety, olive oil as someone else said.  Also avacadoes are delicious and have lots of fat.  I like to spread it on toast like butter.  Instead of regular margarine I use a nonhydrogentated version like Earth Balance but there are probably other ones out there you could try too.

Another good way of getting fat is to stick with the healtheri oils like rapeseed, sesame and olive, and use them very liberally when making things like stir-frys and roast veg. Tasty!
