AR1PAM@AOL.COMSauteed Veggie SandwichIngredients (use vegan versions): 1/4 cup sliced bell pepper
1/4 cup sliced red pepper
1/2 cup sliced onion
1/2 cup sliced mushrooms
salt/pepper
vegan mozzerella style cheese
vegan mayonnaise
lettuce
vegan sandwich roll
olive oil
Directions:Lightly coat skillet with olive oil. Add peppers and onions and sautee at medium high heat for about 2 minutes. Add mushrooms, salt and pepper, and sautee for additional 1-2 minutes. Sprinkle small amount of shreaded vegan cheese over veggies. Allow to melt. Scoop veggies into roll, add lettuce and vegan mayonnaise.
Serves: 2
Preparation time: 15 minutes

The recipe sounds yummy. To add a slight roasted flavor add a tsp. of tamari sauce while sauteing the vegies. It won't give it an oriental flavor at all.

Vegan Mayonnaise is available at most good health food stores. You might also find a source at the Fresh Fields web site, but I don't have the URL handy. I think they are starting to deliver under the guise of Whole Foods.

Nayonaise is a good vegan mayonnaise. I buy it at the local supermarket in the natural foods section. Watch out with veggie cheese, though- many brands use caseine or caseinate, which is a milk protein.
