aparad61@maine.maine.eduCucumber SandwichIngredients (use vegan versions): 4 slices of your favorite bread
A few blobs of veggie vegan mayonnaise
1 fresh cucumber, about 6 inches long
A handfull of fennel sprouts
2 large leaves of lettuce
Freshly ground black pepper
Directions:Smear the mayo on each slice of vegan bread. Cut tips of cuke off, rubbing tips on exposed flesh to reduce bitterness. Slice the cuke into four lengthwise pieces (leave the skin on!). Place two slices of cuke on each of two slices of vegan bread. Cover cuke slices with sprouts, lettuce, and lots of black pepper. Top with remaining vegan bread slices.
Serves: 2

I LOVE CUCUMBER SANDWICHES!

I just take out the mayo altogether though.. Everyone at school calls me a cuke-freak because I bring a cucumber sandwich almost every day! I guess they find it a bit funny that I'm nibbling on vegitables while they're eating poor little animals chuck full of saturated fat
