Tomato Sandwich

Ingredients (use vegan versions):

    1 medium tomato
    vegan mayonnaise to taste
    vegan soy bacon bits
    2 slices white bread

Directions:

Slice tomato and place slices on vegan bread.  Spread mayonaise on vegan bread to taste Sprinkle soy bacon bits on sandwich, close and enjoy!

Serves: 1

Preparation time: 2 minutes

If you are going to take this sandwitch with you on the go, let's say to work, pack the tomatoes in a seperate plastic bag so they do not make your bread soggy.

This is the greatest time of year!  SOOO many tomatos!! When my husband drags me out of bed at 5:00 am to pack him a lunch this only takes a few minutes and he LOVES it! With salt & pepper of course.
