Moms Cucumber Salad

Ingredients (use vegan versions):

    3 med. cucumbers
    salt
    5 teaspoon sugar
    5 teaspoon vinegar

Directions:

Slice cukes very thinly.  Place in glass bowl and mix with 1/2 tsp. salt.  Let sit 10 minutes.  Drain excess liquid from bowl.  Mix vegan sugar and vinegar together, pour over cukes and mix, and chill.


This is an excellent, simple salad.  I have made it for years in a slight variation:  3 peeled sliced cucumbers, 1 thinly sliced medium red onion, vegan sugar to taste ( I use 1 tbs. ), 1/2 tsp. coarse ground black pepper, 4-5 tbs. vegan red wine vinegar, scan't 1/4 cup plain yogurt (mayonaisse substitute also works nicely). Mix all but veggies thoroughly first, then add veggies and coat completely. I like to make this a day ahead and store in a covered container so all the flavors have a chance to meld. If you don't mind spending the extra $, english cukes are really superior in this.  Serves 4-6.

Thank you. Was looking for my moms old recipe for cucumber salad. She never wrote it down and has now passed away. This is exactly it -- must be a Dutch thing.

Came home with 7 cucumbers from my CSA share and what to do? Cucumber salad.   Made it with the additions as Greg suggested and before I put it in the fridge, tasted it and it was good then.  I knew I had a keeper with this recipe!

i knew i was going to like this! and i did. very simple yet very delicious.
i imagine this would be a big hit at grill party.

I love this name! My mom used to make something similar to this only without sugar and instead fresh toasted sesame seeds. Supper refreshing salad, I love it!
