1 teaspoon miso
1 teaspoon approx. salt pickle plum paste (sour)**don't worry if you can't find it
1 pinch salt
1 teaspoon mustard
1 handful green onions
Directions:Crumble the tofu. Mix everything together.
For best results, let it sit for a few hours to let the flavor really sink in.
Serve as a sandwich, with mayonnaise on the vegan bread.
Its quick, easy, and very tasty!

This is a hit around here. As an omnivore, I loved the taste of egg salad. This is a great pseudo-salad. Tastes great on a breadmachine bagel.

Eggless Egg Salad... a wonderful concept... a vegan version of a delicious food i grew-up with; but MAYONAISE is whipped chicken embryos and oil. Is there an alternative to mayo i could use?

Most natural foods sections in regular grocery store offer an eggless mayo, but I've never tried it.. if your brave, good luck!!

Eggless mayonaise - the Nasoya brand is pretty good - I think it tastes like Miracle Whip, but its been quite a few years since I've had that. Howe'ver, it can be a bit unsettling if you have a sensitive stomach (meaning, it can get gassy!!).

Vegenaise is the best vegan mayo! Way better than Nasoyas Nayonaise!!!!

Vegenaise is waaaay better than Nasoya! Nasoya has a very bad taste is you ask me, I tried it before I tried Vegenaise. I use canola oil Vegenaise, i have heard that the Grapeseed Oil kind is good too. My omnivore family even likes Vegenaise-they say they can't tell the difference between that and regular, full fat mayonaise inm a sub or on salads. By all means, use vegenaise.

Vegenaise is the way to go, preferably the grape seed oil kind as it is healthier than canola. Also, there is an eggless egg salad mix by Mori Nu tofu brand that you just mix with silken tofu and a little bit of soy mayo. Its cheap, quick and tastes great!

I like this product called Miso Mayo. It comes in three different flavors. You can find it at
www.misomayo.com . My favorite is the garlic n dill.

I'm surprised no one ever talks about Spectrum natural eggless mayonnaise. Its natural, no trans fats, and as far as I know, it tastes just like regular mayonnaise. I personally hate the taste of mayonnaise (vegan or otherwsie) so I only use it when its taste is disguised by other stuff. But if you miss regular mayo, Spectrum is the way to go. I found it in my health food store (Yes! Organic in Washington DC).

Amberleiper: I don't know where you live but I'm in Toronto and I found Vegenaise at the Big Carrot. I've also seen it other Health Food Stores.

Another vote for Spectrum here. Its great stuff, better than regular mayo, and cheaper than vegenaise too. I even found it at a smallish regular grocery store.
