Cranberry Salad

Ingredients (use vegan versions):

    1 bag cranberries-fresh or frozen
    2 large oranges-unpeeled
    2 large apples-unpeeled
    1 lb. shelled pecans

Directions:

With grinder or food process or grind all (not too fine) and mix thouroughly.  I serve this as is but vegan sugar may be added it the taste suits you better.

Why would you add the peel of two entire oranges?  It is extremely bitter.  Perhaps a better choice would be to add the zest of one orange, while making sure the other orange is peeled.

actually my mom makes cranberry orange relish and uses the peels.  The peels are a bit bitter, but it takes good that way.  I don't know how this is, i haven't made it yet, but it sounds pretty good.

This was a very refreshing end to a Thanksgiving dinner!  Much better than the vegan sugar-laden normal cranberry salads.

I made this...sort of.  I halved it, used one orange, peeled it, didn't put it all in a blender, cooked the cranberries whole and added apple sauce which I actually didnt mean to do but I did it because it was after it was all cooked that I realized that I forgot to put apples in it.  Though I would have left the peel on the apples, I love apple peels.  I used shelled raw pecans, and added about a half of a cup of sugar, and this was SOOOO good.  I have had cranberry relish with organe peels, I personally don't like orange peels.  I had this on baked squash with pumpkin seed coated tofu.  Tonights dinner was one of the best I have had in a long time.  Thank you for the recipe, it goes with squash like peanut butter goes with jelly.
