Simple To-die-for Green Beans and AlmondsIngredients (use vegan versions): 1 3/4 pounds green beans, stem-end trimmed
1/2 cup sliced unblanched almonds
1 tablespoon olive oil, or more, to taste
coarse salt and ground pepper
Directions:Preheat oven to 325.
1. Bring a large pot of salted water to a boil. Add green beans; cook for about 6-8 minutes, or till cooked thoroughly. Drain in a colander; rinse with cold water.
2. Meanwhile, spread almonds out on a cookie sheet. Place in oven and bake for approximately 6-7 minutes. Be careful not to over cook them!
3. Place green beans in a large bowl and toss with olive oil. Add salt and pepper to taste; toss some more. Garnish with almonds.
Serves: 3-4
