Asian Coleslaw

Ingredients (use vegan versions):

    5 tablespoon rice wine vinegar
    5 tablespoon vegetable oil
    5 tablespoon peanut butter
    3 tablespoon soy sauce
    3 tablespoon brown sugar
    2 tablespoon minced ginger root
    1 1/2 tablespoon minced garlic
    5 cup thinly sliced green cabbage
    2 cup thinly sliced red cabbage
    2 cup Napa cabbage shredded
    2 red or yellow peppers, thinly sliced
    2 carrots, julienned
    4 green onions, chopped
    1/2 cup chopped cilantro (fresh)

Directions:

In a medium bowl, whisk together the rice vinegar, oil, peanut butter, soy sauce, brown sugar, ginger, and garlic.

In a large bowl, mix the green cabbage, red cabbage, Napa cabbage, red bell peppers, carrots, green onions, and cilantro. Toss with the peanut butter mixture just before serving.

Serves: 10

Preparation time: 30


This is a fantastic salad.  I added hot chili sauce and chopped peanuts.  Also, sliced almonds would be equally tasty.  I highly recommend this recipe.

What is meant by Napa cabbage?

Napa is just a type of cabbage.  Rather than a round compact head its kinda oblong shaped but usually still densely compact.  Its a lot like bok choy but I'm pretty sure bok choy and Napa are different variaties, someone else may correct me on that though.  Its pretty common in most big grocery chains ala Safeway, King Soopers/Kroegers,, Whole Foods etc right beside the regular round head cabbage.  If you are near an asian market they will definitly have it.  Its got a different flavor than green or red round head cabbage.

This salad was fantastic! Not only did it taste deelish, all the colors and textures made it beautiful to look at too! We added some vegan chicken patties on top to make it a bit more hearty.

This was amazingly delicious! I'm obsessed with peanut butter so I thought this was great. It made my day! I didn't have any napa cabbage soI added more green cabbage instead. I also didn't have any peppers but it was still yummy. That dressing is awesome. I imagine you can put into alot of things like noodle dishes, etc. Thank You! Thank You!

This is so freaking tasty!  I played with the recipe a little bit - used dried ground ginger instead of fresh, garlic powder instead of fresh, agave nectar instead of brown sugar, no oil, rice vinegar instead of rice wine vinegar, and I used chunky peanut butter.  I made a whole lot less too and used different veggies.  It sounds like a massacred the original recipe, but I didn't really.  It is great! Thumbs Up
