Awesome No-Oil Cucumber-Tomato Salad

Ingredients (use vegan versions):

    1 medium cucumber
    1 medium tomato
    1 small red onion
    2-3 tablespoon cider vinegar
    1 teaspoon sugar
    1/4 teaspoon salt
    1/2 teaspoon lemon juice
    1/4 teaspoon red pepper flakes

Directions:

Wash and coarsely dice the tomato and cucumber (if the cucumber isn't organic or if the skin is really tough, you should peel it).  Dice the onion finely.  Mix the veggies together in a bowl and add the rest of the ingredients.  Mix well.  Store, covered, in the refrigerator and serve very cold.  The longer it sits, the better it gets.  You can tone it down by reducing (or eliminating) the hot pepper -- or tone it up by adding more!  Serve with crusty vegan bread or over cold rice.

This recipe modified from Thai Cucumber Salad, found in Still Life with Menu by Mollie Katzen.

Serves: 2-4

Preparation time: 10 min. plus chilling


Youre right-this is awesome!  I love that there is no oil in it.  It still tastes great though!

This was really good. I forgot to add the onion, but it turned out great anyway, next time I make it I'd definitely make sure to add it.  Yum.

I just used a slice of onion, and no red pepper flakes, but it did need some black pepper. I also added some green pepper that i had sitting around, and i used fresh lime juice instead of bottled lemon, and overall this salad was alright.
