Spinach and Pine Nut Salad

Ingredients (use vegan versions):

    baby spinach
    olive oil
    pine nuts
    balsamic vinegar
    salt and pepper

Directions:

Heat some olive oil in a skillet (a few tablespoons, depending on how large a salad you are making) and as many pine nuts as you want.  Roast the pine nuts until they are golden brown.  Be careful--the timeframe from golden brown to totally burnt is very short!!  Pour the hot roasted pine nuts and olive oil (be careful of splashing) over the spinach and toss quickly.  This will wilt the spinach a little.  Add balsamic and salt and pepper to taste.  Enjoy!

Serves: varied

Preparation time: about 2 minutes


I added dried cranberries, which were both yummy and pretty.

This was really good.  It can also be exellent adding strawberries, pears or oranges  - even some purple onion!

This was really simple to make and tasted awesome! I added a couple sliced strawberries as one reviewer recommended and it worked out great. Very diverse flavors but they all came together well. Will definitely be making this regularly!

Oh, one more thing, as noted the spinach does wilt down quite a bit - so plan to put in a lot more than it seems like you'd need!
