Broccoli Salad

Ingredients (use vegan versions):

    2 bunches of fresh broccoli, washed, drained, and cut in bite size pieces
    1/2 red onion, chopped in bite size pieces
    small package roasted and salted sunflower seeds
    6-8 baby carrots, sliced
    1 can water chestnuts, drained, and sliced in half
    1 cup vegan mayonnaise
    2 tablespoons sugar
    2 tablespoons vinegar

Directions:

Mix all ingredients and let stand several hours in refrigerator.  Recipe can be adjusted to ones taste.

Serves: 6-8

Preparation time: 10 minutes


Modification suggestion: Instead of mayo (which contains eggs), try this: Whisk the vinegar together with about 1 T oil plus 1-2 T orange juice. Omit the vegan sugar, and add about 1/4 t Chinese 5-spice (which contains anise, celery seed, cumin, coriander, cinnamon, and clove--yes, I know that's 6 spices). Also, add about 1/2 cup rasins.

A friend of mine made this salad for me,but she added raisins and bacon. I had to have the recipe. I have made it for several potlucks and it is always a BIG hit.

In my broccoli salad I add red onion and pine nuts along with Nayonaise(soy mayo) or make my own from tofu. Tastes great!

This is tasty!  I didn't have carrots, and added some imitation bacon bits (maybe a 1/4 cup?).  I also was out of fresh onion so used maybe a tsp or so of onion powder.  Very good, would be perfect for a pot luck or picnic.

SOOO good!!! I did without the vinegar and sugar. But soo delicious and filling but healthy!

delicious!! you definitely can go without the sugar. i've made it with, and without, and i can't tell the difference. the sunflower seeds and water chestnuts are a nice twist for flavor and crunch.
