College Dinner Delight

Ingredients (use vegan versions):

    1 cup white rice
    1 medium red pepper
    1/2 can of diced tomatoes
    1 cup of kernel corn

Directions:

Cook the rice according to the package, cut red pepper up to your own personal taste, put in the canned tomatoes and plop on the kernel corn.

Serves: 1

Preparation time: 5-10 minutes


Very simple and delicious. I make this quite often, usually adding a can of beans of some sort. You can also skip the tomato and seasonings in favor of salsa. Also very good in a tortilla, like a burrito.

I eat this like...three times a week. NOT exaggerating Undecided

Variations:
Using half of a red bell pepper, and half of a green (I like peppers)
Wrapping it all up in a tortilla
Brown rice instead of white (everytime! it tastes better)
When I'm not wrapping it, I put in about half a cup of vegetable broth to make a soupy stewy type thing and dip chips in
Black beans, broccoli, onions, or garlic added
Crushed whole tomatoes instead of diced
Fresh diced instead of canned
Lots of pepper

I made this but used some black bean & corn salsa instead of the corn & tomatoes.  I also sautéed the peppers in some olive oil with some garlic. Toss it on top of the rice then the salsa.

Not to shabby. Needs some work because it needs more flavor for my tastes. Next time I think I'll add some lime juice and add a few seasonings to start.
