esh_21@yahoo.comQuinoa, Shitake Mushrooms and Adzuki beansIngredients (use vegan versions): 1/2 cup sliced carrots
3 thinly sliced scallions
1/4 cup shitake mushrooms sliced ( slightly crushed oyster mushrooms work well too)
2 cups cooked adzuki beans, without the liquid
1 cup washe'd quinoa
1 tablespoon olive oil
2 cups veggie broth
salt, pepper
Directions:Saute veggies until tender. Add broth, beans and quinoa. Bring to a boil. Reduce heat to low and simmer for c. 20 minutes, until liquid evaporates. Add salt and pepper and mix with a fork or wooden spoon. enjoy.
Preparation time: 25 minutes
quinoa is bomb.

Beautiful meal. Subtle in flavour and texture. I over-cooked my beans but it still came out well. It makes you feel full but without the sense of heaviness. A simple meal that is immensely satisfying.

Great recipe. Easy to make. I found it required a little bit more liquid to cook the quinoa. I also didn't have adzukis so I used red kidney beans. Also, sauteed a little garlic along with the veggies and some crushed red pepper.
