Coconut Mango Rice

Ingredients (use vegan versions):

    2 cups coconut milk (use light to cut down on fat calories)
    1 cup uncooked jasmine or basmati rice
    1/4 teaspoon freshly grated nutmeg
    1 ripe mango, chopped (can use a peach if no mango is available)

Directions:

In a saucepan, bring coconut milk to a slow boil. Add rice and nutmeg and stir. Bring to slow boil again.  Reduce heat and cover. Cook for about 20 minutes, or until rice is tender. When rice is cooked, remove from heat , add mango, and stir. Let it cool for 5-10 minutes and enjoy! Goes well as a side with spicy Thai food!

Serves: 4-5

Preparation time: 40-50 minutes

Alright, so I didn't use any of the ingredients listed... but I got the same thing?

1 can full fat coconut milk
1.25 c minute rice
1/8 tsp nutmeg
1 peach

My mom thought it was super delicious. I liked it a lot. I liked it a lot.

OK. I made this tonight but with texmati and I thought it was pretty good. My daughter did not like it at all. Next time I'm gonna try to add a little vanilla.

yam. I halfed the recpie, add a bit sugar and used canned mango. it was tasty, a good breakfeast or dessert. for half of the recpie I got only one singal dish.. not as mentioned. all in all a good dish.

I used regular coconut milk too, one can, with 1 c of jasmine rice and 1/4 tsp of nutmeg. I've had terrible luck with mangos here, so I thawed some of TJ's frozen mango/raspberry/blueberry mix to have with it. I also sweetened the rice a little, because the nutmeg taste was a little strong for me. Tasty! Coconut rice is so good.

I def needed more coconut milk as it needed to be a little sweeter and the rice didn't have long enough to cook. Other then that I love it and will make it again with more coconut milk and I might try it with peaches.

Has anyone tried cooking the rice (with the coconut) in a rice steamer rather than on the stove top?  Please share your thoughts.
I think this would make a wonderful breakfast.
