Millet with Red Swiss Chard Leaves and CarrotsIngredients (use vegan versions): 1 medium onion, chopped
2 carrots, chopped
1 bunch red swiss chard leaves, chopped (use also the stems)
1 cup millet
2 cups vegetable stock (don't put too much water, as the chard will leave its juice)
1/4 teaspoon salt
1/4 teaspoon ground black pepper
2 Tbl. olive oil
Directions:In a medium pot, heat the olive oil. Saute the onion. Add the carrots and saute. Add the swiss chard. When the chard starts to leave some of its juice (after 1-2 min.), add the millet, the stock, the salt and the pepper. Bring to boil. As soon as it starts boiling, cover and cook for 10-15 min. Enjoy!
P.S. You can substitute the millet with quinoa. Its really good.

I thought this was very good, but I needed to cook the millet for much longer than 15 minutes.

yup. Millet takes 40-45 minutes to cook, which ended up leaving the chard rather dull looking. I think next time ill add it closer to the end so it still looks appetizing and nutritious. It really only needs a couple of minutes. I also added some black beans in to make it a complete meal (also cuz i added too much salt by accident - forgot there was stock in it already - and had to try and dilute it). I liked it though. I'm always looking for new ways to use millet.

I tried this recipe tonight, except I used kale instead of swiss chard. I let the millet cook for about 20 mins ad it came out great. I toppped the dish with a lemon tahini sauce because millet tends to be dry. It was a wonderful dinner.
