Couscous-Bean Salad

Ingredients (use vegan versions):

    1/2 cup whole wheat couscous
    3/4 cup water
    1/2 teaspoon vegetarian bouillon or salt
    2 cup rinsed drained canned chickpeas or black beans or a mix
    3-4 tablespoon Italian-style salad dressing or 2 tablespoon oil + 1 tablespoon vinegar
    1 sweet pepper (any colour) chopped or 1/2 cup frozen sliced peppers
    1 cup green or yellow beans (individually quick frozen is fine)
    1 tomato, diced
    salt and pepper to taste

Directions:

Cook the couscous according to package directions adding the bouillon for flavour. Allow it to cool at least partially.  Add the chickpeas, salad dressing, peppers, beans, tomato and salt and pepper to taste. This makes a great lunch - I add the frozen vegetables in the morning and they're thawed by lunch time. Makes about 2 meal-sized servings.

Serves: 2

Preparation time: 1 hour

I am surprised no one has reviewed this and it has three stars. I was looking for a dish to take to lunch tomorrow to work. This took me 30 minutes, and I used the veggies left over in my fridge! I added califlowers to the couscous. I also only added one tablespoon of oill, just because I am watching the oil. Smiley I just took a bite and it was yummy! Very healthy too. !
