Millet

Ingredients (use vegan versions):

    1/2 cup of millet
    1 1/2 cups of boiling water or vegetable broth
    teaspoon of margarine
    pinch of sea salt

Directions:

Wash millet and drain. Put millet in a dry pot on medium heat, and stir until dry and gives off a nutty scent.  Remove pot from heat and pour in boiling water or broth.  Return pot to minimum heat and simmer for about 20 minutes.  Remove from heat, fluff with fork and stir in vegan margarine and a bit of sea salt.

This replaces rice as a side dish and has a nice, mild taste. My 3 year old daughter loves it served with a tofu stir-fry.

Serves: 2-3

Preparation time: 25 min.


try this without any oil or fat - I soak first - a day or over night the cook - salt after cooked - it is buttery and delish it is greate with whole rice.

I found that this method works better with the cover on the pot during simmer time--similar to cooking rice.  Thanks.

I've found that, like Katie, It works better to cook it as rice. Its much better without the margarine, though definetely good with the vegetable broth. Yum.

I made this and it was still crunchy after 20 minutes. So I let it simmer for another 10. The final texture reminded me of soft polenta (And, like polenta, the leftovers congealed into a firm lump). Did I do something wrong or is this how millet is?
