Peanut Rice Stuffed Green Peppers

What you need: 

6 large green peppers, cleaned and parboiled 10 minutes, drained
1/2 cup peanut butter
1/2 cup vegetable water (from cooking vegetables)
1/4 cup minced onion
1 teaspoon sage or poultry seasoning
1 teaspoon salt, or to taste
2 cup cooked brown rice
Tomato Sauce:
2 cup tomatoes, 1/4 cup chopped onion, 1/2 teaspoon salt
1 tablespoon sweetener of choice, 1 teaspoon crushed sweet basil
1 tablespoon flour, 1/2 cup water

What you do: 

Clean peppers, parboil 10 minutes; drain. Blend peanut butter with water to make thin paste. Combine with remaining ingredients. Stuff peppers with mixture; bake at 350 degrees for 20 minutes.

SO HOW'D IT GO?

I really liked this. I didn't actually try it with the tomato sauce because of the other things we had in the dinner. It was quite mild but lovely with other things that were stronger. Is the tomato sauce just meant to be on the side? I didn't par-boil them but just put them straight in the oven & it worked fine. Also I added nuts & grated parmasan cheese on the top which was lovely.
