Chapati (Phulka)

Ingredients (use vegan versions):

    1 cup whole wheat flour (or 1/3 white + 2/3 whole wheat)
    1/2 cup Water

Directions:

Put flour in a large bowl with half the water.  Blend the two together until it holds.  Beat and knead well until it forms a compact ball.  Knead dough until it is smooth and elastic.  Set aside for 30 minutes.

Knead and divide dough into 4 to 6 parts.  Roll each ball into a tortilla like flat, about $frac{1{8$ thick.  Heat an ungreased skillet.

Put phulka on it, and let it cook for about 1 minute (The top should just start to look dry and small bubbles should just start to form).

Turn and cook the second side for 2/3 minutes until small bubbles form.

Turn again and cook the first side pressed lightly with a towel.  It should puff.  Serve warm (maybe slightly buttered).

Note: Since the rolled out chappatis will dry out if they are left to stand while cooking the others, it is advantageous to roll them out individually before cooking them.


Use half the water, it says.  What do you do with the other half !?

I lost my recipe for chapatis.  It involved throwing the dough directly on the flame of a gas burner.  It poofed up like a balloon.  Does anyone have this recipe?

Well, in the 3rd step, instead of pressing the chappati with a towel, if you toss it directly on the flame of gas at a high flame(the side which was up before should be down now) then it will puff up nicely. Remove immediately.  -TZ

Well half the water is for precaution, as you start with half and then add bits more depending on the how thick you need it.  If you add all together you will end up with a paste.  I am Indian in origin and it took me years to master this so be patient with it and then it comes naturally.  For puffing you should press very lightly while trying to rotate it.. so give pressure all around it.  Or you can at this stage put in on open flame or burner with a rack and wait for it to puff.  I like the towel cause i tend to find open flame to hot to work with.  Hope this helps.
