lrasmuss@PICA.ARMY.MILCauliflower and PotatoesIngredients (use vegan versions): 1 head cauliflower (white part about 6 across)
2-3 waxy potatoes, peeled and diced
1-2 cups veg broth or water
1 large onion (is there any other size :-) )
Good quality curry powder to taste
salt/pepper to taste
1/4 cup frozen peas
Directions:Cut the cauliflower into florets. Saute the onion in some of the broth unitl transparent in a large dutch oven. Add the rest of the broth and about 1 T curry powder. Mix well, then add the potatoes and cauliflower. Boil (covered) then turn down heat to medium low and cook until potatoes are tender. Adjust seasonings, adding more curry powder or salt/pepper to taste. Just before serving add the frozen peas and stir well. Serve over hot basmati rice.
This was excellent; next time I would increase the frozen peas to 1 cup. Here is an idea for leftovers: I used the larger amount (2 cups) veg. broth, combined equal parts left over curry and basmati rice, and refrigerated that. The next day I tossed in some slivered crystalized ginger and chopped roasted almonds, and served it cold. Very nice, and quite different.

Just more agreement here (how happy!) this was a delicious recipie, even my very traditional grandmother, who frowned when I asked if she liked curry, ate it and was won over to a vegan dish once again! I too, howe'ver, would add more peas next time. (and until I cooked this dish, I didn't even think I liked peas!) thanks!

I made this recipe yesterday and it was fantastic. I added 1 cup of peas as Charlotte suggested, and it was great. Even my boyfriend who is wary of trying new things enjoyed this very much.

This is pretty good, but better after a day or so. I used sweet potatoes instead of regular potatoes. Next time I'll use regular and see if it is better. I am curious though, a lot of the curry dishes on this site don't call for toasting the curry. I've read and been told that's the only way to use curry. Anyone have any thoughts on this?
