Crouching Garlic, Hidden Peanut

Ingredients (use vegan versions):

    1 bunch broccoli
    5 medium cloves of garlic (to taste)
    2 tablespoon soy sauce
    2 tablespoon sesame oil
    1 tablespoon red or rice wine vinegar
    1/2 teaspoon crushed red pepper
    1 tablespoon unbleached sugar
    a few Tbls. dry roasted peanuts
    about 2 teaspoon cornstarch (enough to thicken)

Directions:

Cut broccoli into medium sized pieces and blanch in boiling salted (salt optional) water for one minute.  Combine all of the rest of the ingredients, and stir fry with blanched broccoli for about 5 minutes or until broccoli is tender and sauce thickens.  Serve with brown rice or noodles, use chopsticks, drink sake (again, optional, but recommended!), and ENJOY!

Serves: 2

Preparation time: 10 minutes


This recipe was way too salty, and I love Salt!  Also there was not much of a sauce.

Just wanted to point out that not all dry roasted peanuts are vegan - most have gelatin...so, be aware of that!

we used zucchini,garlic, red pepper & brocolli along with green onion & thought it was really good but just a bit too salty.  We served it over rice.  Definately something well try again.

I used a bit less soya sauce as people had said it was too salty. Were the people who said that using salted peanuts?? Mine were unsalted and it tasted great - unusual but great :-). I'll definitely be making this again. I also added some red pepper that I had left over and I think you could add other vegetables too if you want to vary it.

i had to make this just because of the name. i didn't have peanuts so i used cashews. i was worried about there not being enough sauce so i added about 1/2 cup broth with the cornstarch. this made a lot of extra sauce-- maybe i just had a small head of broccoli? it looked really tasty and my roommate enjoyed it but i didn't try it.

My family really enjoyed this, even the children. I followed the reciped except added some browed tofu cubes. We ate it with brown rice. Thanks so much. Smiley
