Indian Bean and Potato Thing

Ingredients (use vegan versions):

    2 cans garbanzo beans
    1 medium yellow onion, chopped (sweet onions also work well)
    1 or 2 tomatoes (preferably organic because the color is redder, which looks better)
    1 tablespoon garlic powder
    1 1/2 teaspoon salt
    1/8 teaspoon ground black pepper
    1/4 teaspoon red pepper (I usually add a whole tsp, but that's just me)
    1/2 teaspoon cumin
    1 teaspoon chili powder
    1 potato, peeled and chopped
    2 tablespoon vegetable oil

Directions:

Fry the onion in oil until slightly brown. Add onion, chopped tomatoes, garbanzo beans (and two cans full of water), garlic powder, salt, and black pepper to pot on medium high heat. Let cook for 20 minutes.  Add chopped potato. I usually add a little bit of red pepper and chili powder here, but its not necessary. Let cook for another 20-25 minutes.  Add red pepper, cumin, and chili powder. Reduce heat to medium low and cook for another 5-7 minutes.

Ideally, the final product should be a very thick mixture and not runny at all--if it is, drain some of the water.

Serve with rice and vegan pita bread or tortilla.

Serves: 6

Preparation time: 50 minutes


This was EXCELLENT. I would add the potatoes earlier and add more water so it would cook down nice and tender and thick. I added the extra red pepper and chili powder and served it over brown rice made in the steamer -- it tasted better than our neighborhood Indian restaurant! Yummy!

I omitted the tomatoes and chili powder and added two tablespoons of yellow curry powder.  It was fantastic over brown rice.

This was great!  I added the potatoes along with the chickpeas, etc. It only took about 30 minutes to cook.  It was delicious! Thanks for posting this recipe.

this is a very good recipe. i threw some quinoa in it, along with some mushrooms and used vegetable broth instead of the two cans of water. the whole (meat eating) family loved it! id love to throw some celery into this as well

W-O-W is right.  This is one of my new super favs.  I added curry because it seemed a little bland, and it perked it right up.  Served it over rice topped with handful of cilantro.  Like another post, cooking time could be cut down by adding potatoes at same time.   THANK YOU!!!  Great comfort food for a cold day.

I fried up the onion and then added everything to the pot, including the potatoes and some curry powder.  Just before serving I added chopped cilantro and served it up with brown rice, dosas, and some mango pickle.  Delicious and super easy!  I was going to take a picture, but it was gone before I could!

I made a few changes, but this was really good! I used canned basil tomatoes, I didn't measure anything, and I added A LOT of curry powder. I fried the onion, added tomatoes, and beans...and everything else. I cooked the potatoes with everything and let them cook down to make the sauce thicker. I like having some sauce. I served it over turmeric brown rice and with a tofu dish.

This was pretty good. I added thin-cut carrot coins, and halved the additional water. Still, it came out more watery and thinner than I imagined, but once I mixed it with rice and some of it soaked into the rice, everything was great. I probably won't add any additional water next time I make this, and see how it comes out. Definitely a satisfying dinner either way.

To be honest with you, this dish has become a staple in my house. I would have to say I make it at least once a week. I LOVE indian food, and my whole family, (carnivores and all) really love it. Great recipe! Thanks so much!

I had never made Indian before so I tried this recipe along with a couple others from this website.  This one turned out, by far, the best.  It was easy and very good.  I will definitely be making it again! Cheesy

Yep I just doubled this recipe, added as much curry powder as cumin and it turned out great!  I did substitute a little jalapeno pepper for the spicy powders and I think that made it good too.

This recipe is good.

This was good, it reminded me a lot of the popular Chana Masala recipe on here, which I think is a little bit better  Huh.  But it was nice that this recipe upped the nutrition a bit with the tomatoes and potato.  I added 1.5 cups of water, added the potatoes and spices early with the beans (as others mentioned), and also added 1 tsp. of curry powder.  I let it cook uncovered for about 25-30 minutes and it was perfect-not runny at all.  I'd make this again.

Delicious. Added a little more curry than cumin, still needed more spice, though. Put in potatoes at same time as everything else and it was all nice and cooked in 20 minutes. Will definitely be making this again.
