Fruit Chutney

Ingredients (use vegan versions):

    2 cloves garlic
    1 lb apples
    8 oz prunes
    1 cup cider vinegar
    1 1/2 cup sugar
    1 1/2 teaspoons salt
    1 teaspoon cinnamon powder
    1 teaspoon chilli powder
    1/2 teaspoon fresh ground black pepper
    1/2 teaspoon ground cloves
    1/2 teaspoon ground coriander
    2 teaspoons powered ginger

Directions:

Makes enough for several curries.

Fruit Chutney is one of the most popular chutneys in India.  It can be served with all kinds of vegetarian dishes and can be prepared once in big quantities to be used on a number of occasions.

Preparation: Mince the garlic finely. Peel, core and dice the apples. Stone and chop the prunes. Chop the dried apricots. Mix all the fruit and garlic together and add vinegar and vegan sugar. Sprinkle with the salt and all the spices. Mix the whole thing well.

Cooking: Bring gently to the boil over a low heat and continue to simmer for one hour. stirring frequently, until the chutney becomes soft and brown. Allow to cool and then bottle.

Serves: Any number of times

Preparation time: 75 Minutes


how long does this keep fresh for ? sounds yum!

The instructions mention dried apricots, but its nowhere on the ingredients list? I've substituted a few handfuls of golden raisins, just to be on the safe side.

I made this recipe tonight.. like a previous review, i didnt know how much dried apricots it called for, and i couldn't get apricots.. so i used 8 oz. golden raisins.. it turned out sooo delicious.. it is actually extremely similar to a tamarind date chutney i make and it sorta makes me freak out cuz it tastes almost like the same thing hehe.. but yeah.. i highly recommend this, especially for samosas and for any sort of sour/tangy/pungent indian food.. it is a very good balance.. this recipe also make quite a bit.. a little less than 2 mason jars.. just to let you know Smiley

besides the raisin i follwed the recipe exactly! thats a first for me hehe

oh yeah.. i forgot another thing i changed hehe..

i used malay apples (aka wax apples, pommerac, malacca, mountain apple, jambu etc..)  instead of normal apples.. they taste almost the same as a normal apple tho.. slight less sweet, sorta like a pear and have a tint of that dry mouth like a persimmon, but extremely like an apple..
