Hot Bananas in Cinnamon Coconut Sauce (definitely dessert!)

Ingredients (use vegan versions):

    4 large bananas
    1 tablespoon unbleached flour
    2 tablespoon sugar
    1/2 teaspoon ground cinnamon
    1 1/3 cup coconut milk

Directions:

Cut ends off bananas, but do not peel. Place in steamer; cook for five minutes. Skins will turn black -- don't worry!

To make sauce: place flour, vegan sugar and cinnamon in pan and stir until combined. Gradually add coconut milk and stir until smooth. Stir constantly over medium heat until mixture comes to the boil and thickens. Serve over bananas.

Serves: 4

Preparation time: 15 minutes

Thanks Hilary!  All of your recipes sound delish!

MMMMMMMMMM I'm eating them as I type.  I used turbinado vegan sugar (Sugar in the Raw)but the bananas need at least 10 minutes to steam.

No, you do not eat the peel...carefully cut off the skins and place the cooked bananas onto a plate.

This was a very simple recipe and the sauce was very yummy...but I think cooked bananas are a bit too rich for my taste, I will try the sauce over raw bananas next time.

Thanks for the wonderful recipe. Smiley
