genders@netcom.caFried Bananas (side dish, not dessert)Ingredients (use vegan versions): 3 large bananas
1 cup shredded coconut
1/4 (or less) peanut oil
Directions:Peel bananas, slice thickly on an angle, and toss with coconut. Heat oil in a frying pan. Stir fry banana over low heat until heated through and banana begins to brown.
Serves: 4
Preparation time: 10 minutes
Mmm . . . this was very good. I have made this twice and the second time I added cinnamon and maple syrup, and it came out great.

Very tasty. We ate it with breakfast. I didn't have exactly the right ingredients this, so I heated some peanut oil (which I dumped off of some nat. peanut butter!), dumped in the bananas, some crushed almonds, and then threw in a handful of oats on a whim (no coconut). I also added a little bit of cinnamon. My picky kids savored it and so did I- with some soy ice cream or something similar it would make a spectacular dessert.
