Simple Sushi

Ingredients (use vegan versions):

    sheets of nori (seaweed; can be purchased in Asian or health food stores)
    grated carrot
    julienned scallion
    leftover cooked rice
    washed, torn fresh spinach
    rice vinegar
    minced scallion

Directions:

Sprinkle the rice with rice vinegar - not too much!

Lay out a sheet of nori, flat, on your work surface.  Put a strip of rice on it, at end end.  Add veggies of your choice.

Roll up tight, encasing the veggies and rice within the nori.  Slice the nori rolls into 2 long rolls for eating.

Dip in wasabi (Japanese horseradish), pickled ginger, Chinese mustard, or seasoned rice vinegar.

Notes:

You can do LOTS of things with this.  Any vegetables that are good raw will go nicely - just chop them small enough to roll easily.  Toasted sesame seeds can be added for a little crunch.  Marinated tofu can be used, if you like it.

Preparation time: 15 minutes


This is a great, easy idea.  I've been wrapping plain carrot in my seaweed then dipping in sauce.  This sounds like so much more fun.  I can't wait to try it Smiley

Sushi is best made with sushi rice.  It is higher in starch and sticks better.  Also a tablespoon or two of vegan sugar helps.  Be sure to let the rice cool completely before rolling.  Try suchi with avacadoes and cucumbers (julienned).

my family eats nori rolls all the time. my 1 yr old daughter loves them. We put avocado,careroots,tofu and cilantro in them. very good and easy!!!

You must not forget that rice vinigar is needed to give the proper flavor and consistency to the rice, also, I noticed that wasabi was not mentioned and is a wonderfull substance to use with sushi, mix a little with soya-sauce or take plain

Yeah, sushi rice is best, it sticks so well! I like to wrap with the rice outside. I usually use sauteed shitake mushrooms, avocado, cucumbers..the possibilities are endless. And I like to use Braggs instead of plain soy sauce. Gotta love that WASABI, too!

Brown rice can be just as sticky and is much better for you.  Make sure to crunch the rice between your hands while you are washing it to make the extra starch come out and it will be STICKY!

I've kept nori in my pantry for about a year now... I've always wanted to try making sushi rolls but never had the guts to try. I'm so glad I did! It was actually pretty easy, as long as you keep dipping your fingertips in salted water so the rice doesn't stick. Next time I'll use less rice and more veggies, these ones came out all rice... haha On my nori package, it said to toast the nori before you use it for a suchi roll until it turns bright green. I toasted it for almost ten minutes in a dry skillet, and nothing happened, so I just gave up and made the sushi without toasting the next sheet... Does anyone know if this actually makes a difference?

ive never toasted my nori, mostly because ive never heard that youre supposed to do that.
i dont really think the toasting makes that big of difference..my sushi has always turned out fine, if a little deformed due to my lack of skills in the sushi rolling department.. :)

I think nori can be bought pre-toasted (roasted?), or untoasted.
