Cajun Okra Stew

Ingredients (use vegan versions):

    6-7 fresh large tomatoes
    1 can lima beans
    1 can blackeye peas
    1 cup fresh chopped okra
    1 onion, chopped
    2-3 cloves garlic, chopped
    1 tablespoon cajun seasoning
    pepper and salt to taste
    1-2 teaspoon olive oil

Directions:

Heat olive oil in a large stew pot.  Add chopped onions and garlic and saute for 2-3 minutes.  Add chopped tomatoes, lima beans, blackeye peas and cajun seasoning.  Bring to a boil, stir well, then reduce heat and simmer on low for 30 minutes, stirring occasionally.  If the stew gets too thick add water as needed.  Add chopped okra, stir well.  Simmer for another 15 minutes.  Serve over brown rice.

Serves: 4

Preparation time: 45 minutes


This is terrific - easy and scrumptious comfort food.  If you live in an area where okra is available, try it.  I used frozen okra, because fresh isn't available right now.  It was still great.

Some versions of cajun seasoning blend contain salt -- I don't do that, because I like to control salt content separately. If you insist this blend having salt, start with 2 tablespoons salt in the blend, increasing up to 4 tablespoons depending on your sodium tolerance level.  2 tablespoons onion powder 2 tablespoons garlic powder 2 tablespoons dried oregano leaves 2 tablespoons dried sweet basil 1 tablespoon dried thyme leaves 1 tablespoon black pepper 1 tablespoon white pepper 1 tablespoon cayenne pepper 5 tablespoons sweet paprika Combine in food processor and pulse until well-blended, or mix thoroughly in a large bowl.

I made this with 3 cans of diced tomatoes because fresh are too expensive. I also doubled the okra and it was wonderful!  Thanks for the recipe.  Raspberry

For great Cajun spice recipes go here:  http://www.gumbopages.com There are many spice mixes that really help out a boring ol block of tofu. I used to love Blackened Catfish, but now I Blacken tofu and its really good.

Great simple meal, we really enjoyed it.  We would recommend finding a good Cajun seasoning, ours left the Stew a bit bland and without flavor.  Okra may be our new favorite, added a real different taste and texture to the the Stew.

This was very beautiful stew. I ended up adding quite a big more cajun spice but I suspect my cajun spice was simply flawed. I should have used the one posted below. It was somewhat bland, but it was hearty and like I said, very colourful and pretty Smiley

So, so good!  I couldn't find fresh okra or canned black-eyed peas, so I used frozen versions of both.  Also (when I saw how much it was going to make and realized I had a lot more people to feed) I added leftover cabbage soup from the night before (just tomato sauce, V8, and green cabbage), and I used a LOT more Cajun seasoning than called for...  Anyway, it was great!  One of the most popular dishes at the potluck and nobody there was vegan.  Smirk
