Winter Pear and Spinach Salad

Ingredients (use vegan versions):

    4 cups torn spinach
    2 large Bosc pears, thinly sliced
    2 tablespoon minced red onion
    6 tablespoon balsamic vinegar
    6 tablespoon water
    2 tablespoon olive oil
    1 teaspoon Dijon mustard
    1 clove garlic, minced

Directions:

Place the spinach leaves on a large platter or individual salad plates.  Arrange the pears on the spinach in a fan pattern.  Sprinkle with the onions.

In a small bowl, whisk together the vinegar, water, oil, mustard and garlic.  Drizzle over salad.  Serve immediately.

Serves: 4

Preparation time: 5 min.

 Smiley Hi all. I've taken this salad to 2 parties and am taking it again tonight to a raw vegan potluck. It's always a hit!! Thumbs Up I just throw it together though. I don't take the time to do the presentation listed but like I said, people give me rave reviews!! I generally use white wine vinegar rather than balsamic and whatever pears I can find at the store. Tonight I used apple cider vinegar and honestly I think it's lost a bit of it's bite  Huh It's definitely still yummy though!! I love this recipe. Thanks tons for posting it!!

Delicious!  I was unsure about putting red onion in a pear salad but it turned out to be lovely.   Smitten
