Wild Rice and Sweet Potatoes

Ingredients (use vegan versions):

    1 cup of cooked Wild Rice
    1 cup of cooked Basmati Rice

Directions:

I cook them together in the rice cooker with equal amounts of water.

Ingredients (use vegan versions):

    1-2 uncooked sweet potatoes, cut into 1/2 inch pieces.
    1-2 tablespoon fresh chopped parsley
    Salt to taste. (I put quite a bit for this dish.)

Directions:

Fill into plastic lunch box. Mix for cooking. Nuke for 10 minutes on high.

Note: This can also be made using a pre-cooked sweet potato. Then the nuke time is reduced to 3 minutes for reheating.

Variation: I think this would be good with a couple of table spoons of orange juice for extra flavoring added before cooking.

im not sure what you mean by a plastic lunch box? do mean one of the kids lunch boxes?Huh would a plastic bowl work?

This the first recipe that I've tried from Veggies Unite. I tried it last night and it was delicious! My boyfriend also raved about it.

i believe that the plastic lunch box actually just means use a tupperware bowl/box

You could use less salt if you added some more seasonings to the dish besides just parsley. How about some sauteed garlic and onion/shallots? Ginger works nicely as well, especially with the garlic and onions. And don't forget some fresh ground black pepper to taste.

This was really good with the onions and garlic and ginger.  Since I'm not vegan, the addition of a small amount of butter/margarine also enhances the taste.
