Ultra-Fab Patty MeltIngredients (use vegan versions): 2 slices of red onion (rings separated)
1 vegan burger
1 slice vegan cheese
2 small slices rye bread OR 1 large slice halved
margarine
1 teaspoon olive oil
Directions:Get a small Teflon coated frying pan and add the olive oil. Heat the oil over medium high heat and add the red onion. Cook the onion until sweet and tender (approx 5 minutes) stirring occasionally. Meanwhile, spread the margarine on the rye vegan bread, just enough to coat lightly. Cook your burger in the microwave for 1 minute. When the onion is finishe'd cooking, Make a sandwich out of all the ingredients with the buttered slices of vegan bread facing the outside. Grill the sandwich in the fry pan on both sides until they are golden toasty brown and the cheese is melted. Enjoy!!!

Oh my goodness! This sounds so good! I think I'll make it for lunch TODAY! Melts were always my favorite (back in my non-veggie days ^_^)-- I never thought of making one with a veggie burger. Thanks! Bri

this was really good! i jus now had it and i almost want another. just make sure to keep an eye on the onions kuz they burn easy I used regular yellow onion

This is good, good, good! I only had Amys California burgers, so I used one of those with a slice of vegan american cheese on each slice of bread. Also, I caramelized the onion (a yellow one) slices before I put them on the sandwich...I used low-fat mayo and Grey Poupon as a spread...this was yummy!! So much better and healthier than the real thing!! Thanks for posting this recipe.
