Trisha16101@aol.comQuick Veggie PastaIngredients (use vegan versions): 1 cup small bow tie pasta
1 bag mixed frozen vegetables
1 teaspoon minced garlic
1 diced small onion
1- 14oz can diced Italian tomatoes
1 tblsp. olive oil
season to taste
Directions:Bring a four quart pot to a boil and add the frozen veggies, when almost done add the bow ties and cook till tender. Dice and mince the onions and saute in a pan in about 1 tbls. of olive oil. When tender add the diced tomatoes and cook down until most of the moisture is gone from the tomatoes. Drain pasta and veggies and mix all together. Serve with a crusty vegan bread and light salad.
Serves: 4
Preparation time: 30 min.
When I do vegies and pasta I add my frozen veggies to the water when I put it on the stove, then just add my dried pasta once it starts to boil. I have to over-boil my vegies though so it might be too long a cook time for some. Just a small time-saving suggestion that works for me.
