3 carrots, peeled and grated
1 onion, peeled and grated
1 tablespoon oil
salt and pepper to taste
Directions:Combine potatoes, carrots and onion in medium bowl and mix well. Salt and pepper to taste. Heat oil in skillet. Dump in potato mixture and form into a large pancake. Cook until browned on one side, and then flip over and repeat. Serve cut into wedges, or just break it up. Can be served plain, or with applesauce, or sour cream. Yummy, and pretty too!

Hi! I love hashbrowns and your recipe sounds delicious. I'm just wondering what binds the ingredients together while frying? Theres no egg or egg substitute in your recipe so I'm thinking that the pancakes will fall apart in the frying pan. Any suggestions to avoid this problem?

the starch and moisture in the potatoe will hold it together

I've made this recipe tons of times, and never had any trouble with the pancake holding together. And to flip it, I usually put a large plate on top of the skillet, invert, and then slide it back into the pan.

This recipe is taken almost verbatim from the book Fit For Life. I think you should at least give the authors, Harvey and Marilyn Diamond the credit. Otherwise, it is a delicious recipe.

My Mum made these for me when I was a kid all the time, I didn't think a recipe was required, let alone crediting someone else for something not exactly unique! Delish though

It didn't hold for me...maybe its just my skill hahaha. Plain it was great. I'm trying it with applesauce right now and its also very good. Maybe I'm weird, but I think that ketchup makes it taste awesome. Nice dish.

I thought these were great. We also added some fresh chives and parsley to the mixture. It held together as long as we didn't flip it too often or too early (before it got browned).

Hi! I tried this tonight and thought they were great! Instead of making one big one, I didn't have a big enough pan, I made little cakes by forming them in my hand and then cooking in the pan. I also served them with fat free, plain yogurt which I tend to use instead of sour cream.
