Zucchini Patties

Ingredients (use vegan versions):

    2 cup zucchini, grated
    2 cup shredded soymage cheese, Soya Kaas cheese, or drained tofu
    4 cups seasoned bread crumbs
    1 cup chopped nuts
    1 to 1-1/2 cups water (as needed)
    1-1/2 large jars spaghetti sauce

Directions:

Combine zucchini, cheese, nuts and vegan bread crumbs.  Mix well.  Add enough water to make a very thick mixture.  Let sit 30 minutes.  Shape into patties and fry until browned on both sides, or bake in oven at 350 for 20 minutes.

To serve:  top with spaghetti sauce just before reheating.

Please note:  This recipe doesn't have any eggs, if you top it with the sauce and leave it overnight in the fridge, you will end up with something resembling oatmeal mush and tomato sauce.  Not a pretty sight!  ;-)  This does work great though, if you follow the directions exactly.

Serves: 12

Do you mean you can use regular tofu instead of cheese?  Does it still taste good if you do this?

yummy.  i added grated red pepper, along with walnuts and soy mozzerella.  i topped them off with carmalized shallots and portobello mushrooms.  hearty, easy and inexpensive-- what's not to love?

thank you for the recipe! i had an extra zucchini in the fridge and nothing to do with it! this was great b/c i had all the ingredients on hand!

these were so good!! :] also a bit heavy. i used fresh bread crumbs and a little less water, though dried/fresh bread crumbs not specified in the recipe. i reccomend using some sort of binder to replace an egg cause they tend to get a bit crumbly/falling aparat, perhaps some soy yogurt or whatever. thanks for the yummy recipe

Yeah, it's a specific brand, but it isn't vegan (in case you are).

These are really good!  I’m eating some as leftovers right now, lol.

I don’t have a grater, so I used the chop setting on my food processor and the zucchini came out in nice veggie burger style pieces.  I was surprised with how well it holds together, I used egg replacer (but didn’t have to) and Mori-Nu extra firm silken tofu.  At first I thought it was going to be too much bread crumbs, but no, the bread crumbs are what holds it together.  I made 8 big burgers with this recipe, I fried 4 and baked 4.  The fried ones taste better, but the baked ones are healthier.  I didn’t do the spaghetti sauce thing, I just ate them as burgers and they taste good with ketchup, BBQ sauce etc.  They are even good as leftovers!

I’ll definitely make these again.  I think it would be cool to trough in some other veggies, too.

 I guess you could make a 'vegan fetta' using tofu and various herbs - the way my mum makes them is using fetta and zucchini - so i think firm tofu would really work here.
