Speedy Zucchini with TofuIngredients (use vegan versions): 1 zucchini
a little oil for frying
preserved tofu
Directions:Cut the ends off the zucchini and slice into thin juliette strips. Heat the oil in a frying-pan and add the zucchini strips. Fry for 3-5 minutes, depending on size, until fairly soft. Mash half to one cube of the preserved tofu in a little of its own juice and add to the pan. Stir to mix then serve with one of the following: rice, noodles, spaghetti, even toast!
Optional: Thin juliette strips of carrot can also be added to this dish, but put them in before the zucchini.
Note: Preserved tofu can be bought from Chinese supermarkets. They are an acquired taste ...
